Indonesian Culinary : Deep Fried Catfish with Pencit Sauce

One of my biggest dream is to build Indonesian restaurants in foreign country, i tried to write this article so i can introduce you our food menu. I do love Indonesia culinary more than any kind of food. Indonesian menu have strong taste because we do love spices and we are one of the biggest spices producer. So, because i’m used to eat those kinds of food i feel like the other foreign food, especially American menu taste bland. But, i think they are good at making desserts or ice cream, maybe beer but because i’m a moslem so i never try it.
In this chance i want to introduce you one of traditional food comes from Gresik, Indonesia called Fried Catfish with Pencit (young mangos) Sauce. It taste sour (comes from Pencit) and also spicy food. However, the sour taste of the pencit can awaken your spirits so that it is suitable to arouse our sleepy, fresh start again. Therefore, it was suitable for used as a lunch or dinner menu, but it doesn’t suitable for breakfast because it may cause stomachache.

It was very easy to make. The spiced catfish is processed by deep frying (cooking technique with lots of oil so all parts of catfish can be immersed). While the sauce is made with grilled shrimp paste (we called it terasi), salt to taste, a little bit sugar, red chili, and curly paper as many as you are pleased.



You can add fried eggplant or boiled cassava leaves and eat them with rice
